Some of you may remember that a few weeks ago I roasted my first pumpkin. Since then I've been busy cooking up pumpkin goodies and all of them have turned out wonderfully! I still have two cups of pumpkin left and want to make a traditional pumpkin pie since Drew loves them and try out a new recipe for pumpkin biscuits (they were awesome!). Until then, here are links to all the recipes I've made in case any of you are interested:
Pumpkin pancakes- Not overly pumpkiny but still delicious!
Iced pumpkin cookie bars- This is actually a cookie recipe but I was lazy and just made bars and they were awesome! Reminded me of the Little Debbie pumpkin cakes but even better.
Pumpkin coffee creamer- Easy and delicious! Such a fun treat when being far away from Starbucks and Panera!
Crockpot pumpkin spiced lattes- I made these for a baby shower and they were awesome! A total hit! Just an FYI...if you make these and notice a film on the top of the liquid after it's been heated, it's just from the milk getting hot. Just scoop it off and throw it away.
Pumpkin muffins- I've made two batches of these. These are from Cooking Light and are our favorite pumpkin bread/muffin recipe. Delicious and lighter. What more can you ask for?
I've been having fun with my pumpkin! Certainly worth the effort of roasting and freezing it. I can't wait to use the rest and then buy some more!
