I think most of you know that food does not come nearly as ready-made here as it does in America. As a general rule, this really doesn't bother me. I mostly cooked from scratch when we lived in the US anyway so it's really usually not a big deal. One thing I hadn't ever tried to do though was cook my own pumpkin. I had been lazy and got people to send canned pumpkin in the mail. Well, this year I decided it was time to hone my domestic skills and just get on with the pumpkin cooking. I love using pumpkin, we can get them here all throughout fall and winter and they are cheap so I really have no excuse.
So, I got some tips from my awesome mom-in-law, had Drew by me a pumpkin and got busy. I am happy to say everything worked wonderfully and my batch of pumpkin muffins were a hit!

Yeah, pumpkins here look different than in the US but the taste is the same. This one cost around $2.
I then cut the skinny part off, cut the fat part in half, scooped out all the guts and laid them on my silpat on top of a cookie sheet. Doing it in a jelly roll pan or a broiler pan would be much better because then you wouldn't make a huge mess in your oven, but I don't have a pan like that that will fit in my tiny oven so I had to make do.
Roast at 350 degrees for around a hour.
Then all you have to do is scoop out the yummy goodness! I divided mine into 1-cup portions then placed them on a silpat, froze them overnight and then put them in a ziplock bag. I got seven cups out of this pumpkin. Not bad for $2!
I did squeeze some water out when dividing them up but it wasn't too much.
I'm excited to have yummy pumpkin goodies all throughout the fall and winter! It is a bit time-consuming but worth all the effort.

I did that last year and it was great to have when I wanted to make something!!! Good for you for trying it!!
