Galupce

Friday our friend Gabby taught me how to make a local soup called Galupce (Ga-loop-cii). We had it at our neighbor's house last weekend and it was really great so I asked her to teach me. It's easy and delicious and definitely something I can recreate in the States. Here's the scoop (we made enough for about six servings):

Cut up one potato, two carrots and take the tops off of and clean out six peppers.

Also, thinly slice one medium onion.

Add one small onion very finely chopped and about three tbsp. of uncooked rice to about one half-pound of ground beef. Season with two tsp. of salt and 1/2 tsp of black pepper and cumin.

Add onion to hot oil and let cook.

When they are finished add carrots and potato and 2 tbsp of tomato paste and stir together. Then add about one liter of water, 2 tsp. of salt, a dash or two of pepper and cumin and two bay leaves and cook for 10 minutes.

Stuff peppers with beef mixture.

After 10 minutes add the peppers to the pot and cook for 30 minutes covered with the lid slightly open.

Check to make sure the beef mixture is done and serve. Adding a dash of garlic powder at the end gives it a special kick.
