Yesterday we canned our tomato sauce for the year. You can get tomatoes here in the winter but they're much more expensive (like 7 to 8 times as much!) and not very tasty. Along with that, you can't buy tomatoes in cans from the store here like in the US so if you don't make your own sauce you will do without. Last year we made sauce and it was great! My househelper made her recipe and it just has garlic, oil, salt, onions, red peppers and tomatoes and it worked great as a base for every recipe- chili, soup, spaghetti, etc. We made 22 quart jars last year and I just gave my last one away yesterday so it was perfect!
This year we bought what I thought was the same amount of produce but ended up with a lot more. We bought 45 pounds of tomatoes, 45 pounds of red peppers, 9 pounds of onions, 2 pounds of garlic, 3 liters of oil (didn't use all of that) and some salt and it only cost us $30. We ended up with around 36 jars of sauce this year! I gave 8 of them to my househelper because their family is huge and we can't eat that much sauce. I will also be looking for other people to share with.
I don't love doing this type of stuff but it really makes life here a whole lot easier and in the end is worth the six hours of work. I have great help and we save so much money and have many delicious meals as a result. I am thankful for our tomato sauce!

Great work! Hey, will you post your recipe? We can get tomato sauce here but it's US $6 per jar so I usually prefer to make it - but haven't hit on a great recipe yet. Yours sounds wonderful! Also, do you use a canner? Maybe i should email you. :) (Bethany Moore)
Well, I don't really use a recipe because my househelper just makes it for me. She just puts it all together and tastes it until it tastes right. Sorry! We also don't boil the jars to seal them after we put in the sauce (for my American jars). We just turn them upside down and they seal. This year I had to use some local jars and they have a special lid and lid-closer. Sorry if this isn't so helpful but it's what I got! :-)
